For those on a low carb or keto diet, there is a great alternative to potato puree, which is even creamier than standard and it is made from cauliflower. Even if you are not on a diet, this mashed cauliflower is a great side dish for any roasted meat, or chopped pork.

It is made from only 5 ingredients, and if you don’t like cauliflower that much, you can do half cauliflower and half mashed potato. It will get pretty close to that standard texture of a potato puree, and be just as delicious.

The only thing you need to know for this, even if you are a complete beginner, is how to boil water. If you know that, then your dish is ready in a matter of minutes. For this recipe you will need a blender, if you don’t have an immersion blender, use the regular one, but be careful not to over-process the meal and turn it into a soup. But I don’t think it would turn out bad even like that! Even if you over blend it, with some nice spices you can get a tasty soup, a bit different from the standard ones.

For getting that creamy texture, I like using butter milk, but light sour cream also does the job. If you want to enhance the flavour, feel free to add some spices, herbs, bacon and even cheese. It is all up to your taste.

INGREDIENTS :

1 medium head cauliflower
1/3 cup 1% buttermilk or light sour cream
4 cloves crushed garlic
salt and pepper to taste
1 tbsp. salted butter, plus optional more for serving
Additional spices, to your taste (optional)

INSTRUCTIONS :

  • Cut the cauliflower into florets.
  • Steam or boil it with the garlic until it is soft and delicate.
  • Remove it from water, add the rest of ingredients and mix it up in a blender until you make a puree. If you want smoother texture, add some of the liquid which was used for cooking and blend together.
  • Serve alone or as a side dish with different meat.
