LEMON-PARSLEY POTATO FOIL PACKETS

If you don’t like mess in your kitchen, try this foil packets recipe for a tasteful side dish, grilled or baked in the oven.

Foil packets are great variation in the cooking, as it doesn’t get messy, and the food comes out perfectly cooked. This recipe is made of baby potatoes with spices and garlic, drizzled with lemon zest and olive oil, a well combined dish for any roast or chicken grill you are making.

When preparing this recipe, if you don’t have baby potatoes, you can use regular ones, just cut them into smaller pieces for better and faster cooking. Don’t skip on the lemon zest and parsley, as that is what makes this recipe so special.

If you are wondering how to make a foil packet, here are quick tips:
Try to use heavier gauge foil, so you don’t have to think about tearing or breaking, and it will keep your food protected from direct heat. Tear off an 18-inch sheet of foil, for larger packets. Put the food in the centre of the foil and bring up the longer sides of the foil to the centre, so they meet over the food. Double fold the long ends and then the short ones to seal the packet and leave some room for heat circulation inside. Bake it as per recipe.

INGREDIENTS :

16 ounces baby red or yukon gold potatoes, sliced in quarters
1/2 tablespoon finely chopped flat leaf parsley
kosher salt
black pepper
1 tablespoon olive oil
1/2 teaspoon garlic powder
grated lemon zest of 1/2 lemon, 1/2 teaspoon
1 piece of heavy duty foil, 18 x 18 inches

INSTRUCTIONS :

  • Drizzle sliced potatoes with olive oil and season with garlic powder, salt and pepper to your taste.
  • Transfer it to a 18×18 inch flat foil sheet and make a packet like instructed above, by double folding the sides of the foil and sealing the package. Don’t over seal it, as it needs room for the heat to circulate.
  • Grill for 30 minutes over medium heat, and shake the packet every 10 minutes to ensure that potatoes don’t burn on the bottom side. After grill, open and add a pinch of salt, lemon zest and parsley evenly over the potatoes.
  • If you are preparing it in the oven, bake it on 400°F for 35 to 40 minutes, also with shaking halfway. After taking it out of the oven, sprinkle with a lemon zest, add parsley and pinch of salt to your taste.
